The Department
Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organizations for a variety of functions.
The Job
Follow all standard recipe cards with methods and ingredients to ensure quality and consistency.
Follow all directions of the supervisor or Sous Chefs.
Gain basic knowledge of all outlets in the Club.
Be responsible for mis en place.
Assist CDP, No.1 Cook or No.2 Cook with daily duties.
Ensure all the Club's policy and procedures are followed and all literature is read when attending training.
Be responsible for minimising food wastage.
Be aware that personal appearance is an important requirement. Grooming for food &beverage attendants should befastidious. The goal is to present a healthy, professional and natural appearance in both uniform and personal appearance.
Be punctual, efficient and above all, courteous. Assume at all times a pleasing and helpful attitude towards each guest. Never speak in a loud voice to other talents.
Serve all food in a friendly and professional manner.
Personally ensure compliance with all relevant Workplace Health & Safety and Occupational Safety &Health rules.
Align management style, working practices and conduct.
Perform any other related duties as and when assigned by supervisor, Sous Chef or Chef de Cuisine.
About You
A minimum of 1 year's relevant experience in hotels or restaurants
Experience in fine dining, all day dining, large-scale coffee shop and banquet food production
Hygiene knowledge in HACCP
Communication skills in Chinese
Terms of employment
The level of appointment will be commensurate with qualifications and experience.
